Agar-agar is a natural thickener of vegetable origin. It is extracted from seaweed - kelp. Agar is odorless and tasteless, and contains a lot of manganese, magnesium, iron, calcium, sodium and zinc. Gels several times stronger than gelatin. In ice cream, yogurt it is found under the dangerous sounding name E-406. It is used in vegan cooking instead of gelatin.

Agar dissolves at temperatures above 80 degrees Celsius, while it sets at 32-39 degrees Celsius. No need to put it in the refrigerator.
