From the blue poppy seeds are extruded also poppy seed oil, which m.in. regulates kidney and liver function, and accelerates wound healing. All thanks to the content of unsaturated fatty acids, mainly those of the omega-6 group (primarily linoleic acid), which also have a beneficial effect on heart function and help restore the balance between "good" (HDL) and "bad" (LDL) cholesterol. You can buy poppy seed oil in health food stores. It is best added to salads.
Poppy seeds are an absolutely mandatory ingredient in some Christmas Eve dishes - kutia (prepared with poppy seeds, wheat grains and honey) or poppy seed cake.
