Clary sage (Salvia hispanica L.), also known as chia is a plant native to central and southern Mexico and Guatemala, highly prized for its seeds. It was already cultivated by the Aztecs in pre-Columbian times. Today, in Mexico and Guatemala, its seeds are commonly used to prepare nutritious beverages and foods.
Chia is grown commercially for seeds rich in omega-3 fatty acids. They yield about 25-30% oil, mostly α-linolenic acid. Seeds contain protein, fat, fiber , significant levels of antioxidants (chlorogenic and coffee acid, myricetin, quercetin, and the flavonid camferol). Chia seed oil contains a very high concentration of omega-3 fatty acids - about 64%. Chia seeds are gluten-free. Chia seeds are traditionally consumed in Mexico and the southwestern United States. Chia seeds served as a staple food of the Aztecs in central Mexico. Jesuit chroniclers describe chia as the third most important crop for the Aztecs, after beans and corn.
In 2009. The European Union has approved chia seeds as a food product, allowing them to be used as an addition to the total weight of bread up to 5%.

Chia seeds are a healthy and very interesting addition to the diet. You can add whole or ground chia seeds to muesli, yogurt, shakes, salads and baked goods.
"Chia Fresca" is a drink popular in Mexico and Central America. Mix 2 teaspoons of chia seeds with 250-300ml of water, then add lemon or lime juice and sugar to taste.
