Cumin (Nigella sativa) is used in India and the Middle East as a spice, and in Europe it is sometimes used as a substitute for pepper. It is a rich source of: phospholipids and phytosterols, fatty acids (linoleic, alpha-linolenic, eicosadienoic, palmitic, myristic), flavonoids and phytosterols. It also contains proteins, alkaloids, essential oils, vitamins A, E, F, B1, B3, B6, biotin, minerals m.in. zinc, selenium, magnesium, calcium, iron, sodium and potassium.
From the seeds of nigella is pressed oil, which contains large amounts of saturated fatty acids: linoleic acid, oleic acid and alpha-linolenic acid.
